DIY High Protein Ice Cream

Nothing is better than dessert after dinner. For an athlete, this is an ideal time to prepare for recovery with some tasty treats and I'm a big fan of ice cream, I’m also a protein powder chef! I try to find “bad food” recipes and doctor them so that we fitness enthusiasts can enjoy these foods with the guilt.

I have one for becoming leaner and one for my off-season (I like being fat...just kidding). Since I am in the middle of a calorie surplus, I get to enjoy this treat nightly without any guilt. It has a lot of calories, but my caloric surplus is not extreme. I will usually take in 3700 calories daily to maintain my regular weight of 230 lbs. I will indulge when I want when I go out with my wife. I don't eat many processed foods or fast foods. 

Off-Season Ice Cream

1 tsp unsweetened cocoa powder of choice
1/2 tsp baking powder
2 scoops of your favorite chocolate whey (allergies permitting)
1 packet of stevia or a few drops of stevia extract liquid
1 TBSP Jell-O sugar free Butterscotch
2 TBSP natural chunky peanut butter
1 medium size banana (sliced)
1/4 cup homogenized egg whites or 3 raw egg whites
1/2 cup plain Greek Yogurt


DRY INGREDIENTS FIRST

Mix the dry ingredients into a tall pudding cup or small bowl, using a fork. This cup will be used throughout the process. 
Slowly add the egg whites, mixing. You should have a mashed potato consistency. If it is still too thick, add drops of water.

After it is completely mixed, add the peanut butter and fold it over the wet ingredients once or twice to coat the peanut butter.

Put it in the microwave oven. Here's the tricky part; I have a 1000 watt microwave. I set it at 40 seconds and it cooks the mix just enough to rise, but it doesn't harden. If it hardens, it ruins the taste. It's still edible but the texture is a turnoff. You should have a creamy pudding texture with a few lumps, so try 20 seconds at a time and see how it looks. 

Add the Greek yogurt and sliced bananas and fold it a few times. Cover it with plastic wrap and put it in the freezer for one hour.
